Healthy Granola - Makes 1 large kilner jar

This granola is extremely simple to make - my advise would be to measure out all of your ingredients before and have the oven ready to go. It is low in sugar, high in fibre and perfect for any time of the day - breakfast pre workout or add protein yogurt for a perfect post workout recovery snack. My favourite way to have it is for breakfast with yogurt and berries.

For smaller portions halve the below quantities, however this keep really well in an air-tight container and will stay fresh for ages.

  • 500g wholegrain jumbo/porridge oats

  • 4 tbsp. coconut oil melted

  • ½ cup maple syrup

  • 2 tsp ground cinnamon

  • 150g / 1 cup of pumpkin & seeds sunflower seeds

  • 6 tbsp. of sesame seeds

  • 5 tbsp. desiccated coconut

  • Optional added toasted nuts such as hazelnuts, almonds, pecans, goji berries etc

  1. ​Preheat the oven to 150°C.

  2. Put oat flakes into a bowl and coat with oil, maple syrup and cinnamon.

  3. Scatter over baking tray and bake for 10 minutes

  4. On another baking tray, spread out all the seeds and place into the oven with oats

  5. After 10 minutes the flakes should be golden, take out and shuffle them around, and place back in the over for another 5 minutes checking that they don’t burn.

  6. Remove everything from oven and allow to cool

  7. Mix both together and stir in desiccated coconut and transfer to air-tight container/jar
